The new add-in is changed in the settings of Having a default project can greatly speed up the issue creation. Once you open the create issue dialog all fields are immediately rendered. There are multiple ways to set up a default project.
In comparison to the old add-in you can´t select a default project in the new add-in.
Now you can see directly your recent project.

Last used project
You can enable a setting to remember the last used project and automatically select it again next time.
Based on subject
The add-in checks for a project key in the summary in format key: and [key]
Example for Project key DEMO
Key: ---> e.g. Subject: Jira for Outlook, new features….DEMO: new features requested
[KEY] ---> e.g. Subject>Subject: [Jira for OutlookDEMO] , new features….
For easy handling, if your customers send the mails with the project name in the beginning of the subject, Jira will automatically take it over.
If there is a project you regularly work onfeatures requested
This can be handy, when working with multiple projects and external collaborators.

Slightly related, even if you work with multiple projects and a single default project does not work for you, the add-in will automatically suggest this project name when creating a new issue.
