To set a default project, you need an admin. The admin can set up default projects in the Add-in settings: Link missing
Another option, and maybe helpful enough for the moment, the Add-in remembers your recent projects.
So if there is a project you regularly work on, the Add-in will automatically suggest this project name when creating a new issue.
But also all of your other projects can be selected from in the drop-down menu.
